Jamaica boasts miles of stunning beaches, azure seas, and lush tropical vegetation, nourished by many rivers and the towering peaks of the Blue Mountains. The island's culinary traditions are just as varied and colorful, with each wave of settlers - from the Arawak Indians to the Spanish, British, Africans, East Indians, Chinese, French, Germans, and Middle Easterners - contributing their own unique flavors and techniques to the mix. One such technique is JERK, which involves coating meats in a complex blend of spicy seasonings and grilling it over a low smoldering fire, a technique pioneered by the Arawak Indians. In addition, the Arawak contributed cassava, bammie, and pepper pot to the Jamaican culinary tradition, while the Spanish introduced plantains and other new ingredients.
